INGREDIENTS

  • 2 tablespoons oil
  • 8 chicken drumsticks
  • 1 medium onion, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 15-ounce can chopped tomatoes
  • 2 tablespoons tomato paste
  • 2/3 cup frozen corn cobs
  • Salt and pepper
  • To serve:
  • Boiled rice
  • Mixed bell pepper salad

DIRECTIONS

  • Heat the oil in a large frying pan, add the chicken drumsticks and cook over a medium heat until lightly browned on all sides. Remove from the pan and set aside.
  • Add the onion to the pan and cook for 3 minutes until soft, then stir in the chili powder and coriander and cook for a few seconds.
  • Add the chopped tomatoes with their juice and the tomato paste.
  • Return the chicken to the pan and simmer gently for 20 minutes until the chicken is tender and thoroughly cooked. Add the corn cobs and cook for 3 minutes. Season to taste.
  • Serve with boiled rice and mixed bell pepper salad.
