INGREDIENTS

  • 1 packet Indonesian Tamarind Soup SpicePasteŠ
  • 1 tbsp vegetable oil
  • 440 ml ( 2 cups) water
  • 250g sliced fish, 1.5 cm (1/2 inch) thick or fish fillet.
  • 100g (3.5 oz) cut eggplant (aubergine)
  • 2 tomatoes, quartered
  • Chopped coriander as garnish

DIRECTIONS

  • Heat oil in saucepan on medium-low heat. Add SpicePaste and stir fry for 1 minute.
  • Add water and stir well. Bring to the boil; add fish and vegetables. Cover and simmer for 5 - 8 minutes until cooked.
  • Add tomatoes, simmer for another 2 minutes. Serve hot.
