INGREDIENTS

  • 2 white onions, sliced
  • 3 cloves garlic, crushed
  • ¼ tsp turmeric powder
  • 1 capsicum, sliced
  • 1 tomato, chopped
  • 1 cup mixed boiled vegetables (french beans, carrots, green peas)
  • 1 tsp chilli powder
  • 6 tbsp oil
  • 1½ cups uncooked rice
  • Salt to taste

DIRECTIONS

  • Wash and soak the rice for 30 minutes, then drain. Sauté rice in oil until it turns a light pink shade.
  • Add 3 cups of water, salt to taste and cook.
  • Heat the oil in a wide vessel and fry the onions till golden brown.
  • Add the garlic, fry for a few seconds.
  • Add the turmeric powder, fry for a few seconds.
  • Remove the onions and fry the capsicum for a minute in the same oil.
  • Toss in the chopped tomato, vegetables, chilli powder, salt, and cook for one minute.
  • Add the fried onions and the cooked rice. Mix well.
