INGREDIENTS

  • 2 tablespoons butter
  • 20 shallots
  • 250g carrots, sliced
  • 250g rindless bacon, chopped
  • 250g white mushrooms
  • 1 chicken
  • 2 cups white wine
  • 2 tablespoons flour, seasoned
  • 2 cups chicken stock
  • Salt and pepper
  • 1 bouquet garni sachet
  • 1/3 cup Madeira wine
  • Mashed potatoes, to serve

DIRECTIONS

  • Heat the butter in a large ovenproof casserole. Add the shallots, carrots, bacon and mushroom and sauté for 3 minutes. Transfer to a plate and set aside.
  • Add the chicken to the casserole and cook until browned all over. Add the reserved and bacon to the casserole.
  • Add the white wine and cook until reduced.
  • Sprinkle with the seasoned flour, stirring to a void lumps forming.
  • Add the stock, salt and pepper to taste and the bouquet garni. Cover and let simmer for 2 hours. About 30 minutes before the end of the cooking time, add the wine and continue cooking, uncovered.
