  • 3 quarts milk
  • 1 cup sugar
  • 13 ounces rum
  • 1 tablespoon vanilla extract
  • 5 tablespoons cornstarch
  • 4 large egg yolks beaten
  • 1/2 teaspoon nutmeg


  • Bring the milk to a boil in a large saucepan. Mix the cornstarch and sugar in a small saucepan with enough cold water to make a paste over low heat. Slowly add 2 cups of hot milk while stirring to thin the mixture. Slowly add this to the rest of the milk while whisking to avoid lumps. Bring to the boil reduce heat and simmer while whisking for two minutes. Remove from heat.
  • Temper the egg yolks by adding about 1/4 cup of hot milk to the beaten egg yolks while stirring, then add another 1/4 cup of hot milk mixing well. Mix the egg yolks with the pot of thickened milk. Let cool. Once cooled pass through a fine sieve to remove any lumps. Mix with rum, vanilla and nutmeg and bottle. Keep refrigerated. Drink Cold.
