  • 2/3 cup besan
  • 1 teaspoon finely chopped fresh gingerroot
  • 1 garlic clove, crushed
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 2 fresh green chillies, chopped
  • 1/4 bunch of cilantro, chopped
  • 1 1/4 cups water
  • 1 kg skinless cod fillet
  • 1 1/4 cups oil
  • Freshly cooked rice, to serve
  • To garnish:
  • 2 lemons, cut into wedges
  • 3 fresh green chilies, cut into strips


  • Place the besan in a large bowl. Add the ginger, garlic, chili powder, salt and turmeric and mix to blend well.
  • Add the chopped chilies and cilantro to the spiced mixture and stir to mix.
  • Pour in the water and stir to form a thick batter. Reserve.
  • Using a sharp knife, cut the cod into 10 pieces.
  • Carefully dip the pieces of cod into the batter, coating the cod all over. Shake off any excess batter.
  • Heat the oil in a skillet. Add the battered cod and cook over medium heat, turning once until the fish is cooked through and golden.
  • Transfer the batterre cod to a serving dish and garnish with the lemon wegdes and green chilies. Serve with freshly cooked rice.
